Cauliflower Rice

160g/5.5 oz cauliflower florets per person, 4g carbs per serve.

(It is best not to use the thicker stalk UNLESS you like a stronger cauliflower flavour. This will depend on personal preference & the dish you are serving it with)

Process florets in a food processor using the finer grating disc until it looks like rice.

Place in a microwave container with a little water & cover with lid.

Cook on high for 5 minutes (time will vary depending on how much you are cooking)

Stir rice & cook in high for another 2 minutes (again this will vary or not be required at all depending on quantity)

Put cauliflower rice in a sieve & using back of a spoon, press down to drain as much water as possible. You may need to do this in batches depending on quantity.

Put rice back in microwave bowl (which will still be warm) fluff with a fork before serving onto plates.
