500g | chicken breast fillets sliced in 1cm/1/2 inch slices | 0g |
1 tablespoon | basil pesto or dried mixed herbs | 1.5g |
1-2 | clove crushed garlic | 2g |
1 | medium brown onion peeled & cut into wedges | 5g |
150g/5 oz | button mushrooms sliced | 0g |
425g/12oz | tin crushed tomatoes | 20g |
½ cup | pitted black olives | 8g |
2 tablespoons | chopped fresh parsley (or 1 tablespoon dried) | 0g |
Total Carbs | 36.5g |
Mix chicken with pesto in a bowl (can be marinated in fridge if you like).
Heat fry-pan over med heat & add 1-2 tablespoon olive oil.
Add chicken & stir-fry 2-3 minutes & remove.
Heat a tablespoon olive oil, add onion & garlic & stir-fry 2-3 minutes until onion tender.
Add mushrooms & tomatoes & stir-fry 1 minute
Add chicken & olives & heat through.
Serve with vegies or salad.
