A simple but classy meal for family and friends
Serves 4, 8g carbs per serve
|4||half chicken breast fillets around 200g each||0g|
|1/2 cup||approx tomato paste||25g|
|dried mixed herbs||0g|
Line 2 baking trays with non-stick baking paper. Pre-heat oven to 189°C/350°F
With a sharp, pointy knife cut deep slits crossways about 2cm/1in apart on each chicken breast.
Put 2 breasts onto each baking tray leaving some space between them. ( putting breasts on tray now will make the next step easier)
Put some tomato paste into each slit, then put some mixed herbs into each slit & then some mozzarella cheese.
Do the same to each chicken breast.
Sprinkle more mozzarella cheese over the top of each chicken breast.
Bake in oven for 20-30 minutes until chicken cooked through.
You may need to rotate trays & swap oven shelves during cooking so they brown evenly
Serve with vegetables or salad.
