This is a quick tasty Asian style meal. Honey can be omitted & this will greatly reduce carbs.
Makes about 2 serves, 10g carbs per serve.
|450g/1lb||chicken thigh fillets||0g|
|1 tblspn||finely chopped fresh ginger||neg|
|20ml||dark soy sauce||3g|
|1||fresh chilli (hot or mild whatever you prefer)||1g|
Cut chicken thigh fillets into 3cm/1.5 inch chunks.
Slice onion, crush garlic & finely slice chilli.
Heat a medium saucepan & add a tablespoon olive oil. Add chicken & cook until lightly browned. Remove to a bowl.
Add some more oil & cook onion, garlic, ginger and chilli until onion is soft. Add soy sauce & honey & return chicken & any juices to the pan. Simmer for 10 minutes on med-low heat until sauce reduced.
Serve with stir-fried veges or salad
