This is a firm favourite and quick to prepare.

1 tspn each | of dried oregano & marjoram | 0g |
4 x 120g/4oz | zucchini/courgette | 10g |

Cut meat into 2 cm cubes & brown in some olive oil in a large saucepan over medium – high heat. Add chopped onion & capsicum garlic & cook until onion is softened. Add remaining ingredients. Reduce heat, cover & simmer for 1 ½ hrs until meat tender. Check after 1 hour & remove lid if there is excess liquid.
About 10 mins before serving, put zucchini/courgette through a spiralizer to make ‘spaghetti’
Put zucchini spaghetti in a steamer basket & steam above a pan of boiling water for 3-4 minutes, stirring half way through.
When cooked, put steamer basket on 3-4 thicknesses of paper towel & put another 3-4 thicknesses on top of spaghetti & gently press down with your hand to extract excess water. Take care as noodles will be hot.
Arrange zucchini spaghetti on plates & top with bolognaise. Serve with grated parmesan if desired.
FOR SPAGHETTI & MEATBALLS…..
Substitute 750 g beef mince/ground beef for the chuck steak
Form mince into meatballs about the size of ping-pong balls. Put 2 sheets of paper towel on a dinner plate & arrange balls in a circle around plate.
Cook in microwave on 100% power for 2 mins, turn over & cook another 1 minute.
Heat oil in large pan, cook onion & garlic until onion soft. Add remaining ingredients. Place meatballs in sauce (NOT liquid from plate) & bring to boil.
Reduce heat, put on lid & simmer for 20 mins, stirring halfway thru. If sauce too watery, take off lid to reduce sauce as above.
Prepare ‘zucchini spaghetti’ as above
