Serves 2, 10g carbs/serve (note you don’t consume the Orange Juice so probably 5g)
|1||lemon cut into 5mm slices||0g|
|1 cup||freshly squeezed orange juice||19g|
|2cm||piece of fresh ginger cut into thin straws||1g|
|1 tbspn||finely chopped coriander (extra)||0g|
Place lemon slices in a single layer in a large shallow frypan with a lid.
Scatter half the ginger over the lemon slices
Season the salmon on both sides with salt & Pepper & place on lemon slices leaving space between each fillet
Scatter remaining ginger on each fillet & lay 2-3 sprigs of coriander on each fillet
Pour enough of the orange juice into pan to just cover lemon slices.
Cover with lid & cook over low heat for 6-8 minutes until salmon cooked
Spoon 5 tablespoons of juice from pan into a container & add extra chopped coriander. Whisk in 1 tablespoon olive oil & spoon around fish to serve.
Serve with stir-fried vegies or salad
