These go great with anything you used to use wheat spaghetti for.
Just take care not to over cook & remove as much liquid as possible before serving.
Use 1 medium zucchini/courgette (180g/6oz) per person, washed & cut off ends, 3g carbs per serve.
Using a spiralizer, make noodles & place in steamer bowl.
Place steamer bowl over a saucepan of boiling water & put on lid.
Cook for 1-2 minutes (time will vary depending on quantity cooked) Remove lid & using tongs, stir noodles.
Cook for another minute (if required, again depends on quantity) & then remove from heat.
Place steamer bowl onto several layers of paper towel & using another several layers of paper towel, gently press down on noodles to remove as much water as possible.
Using tongs or a fork, gently fluff up noodles & serve on plates.
VARIATION : could also use carrots or a combination of both but would need to be cooked separately as cooking times will vary. Carrots will have a higher carb content!
